It’s hard to pass through Saint-Rémy without stopping off at Cédric Burtin, a two-star Michelin restaurant named after the chef’s floral cuisine. Cédric Burtin orchestrates a creative cuisine that oscillates between tradition and modernity, in an old mill that has been transformed (parts of the machinery have been preserved). Trout, Charolais beef, snails, Bresse chicken, coq au vin… he loves working with Burgundian dishes and serving them in his own sauce!

Born in the pastures of the Charolais region, this Michelin-starred chef likes to cook “good and beautiful”: his inventive cuisine is magnified by his carefully crafted presentation. Highly committed to an eco-responsible approach, he favors local producers, short circuits and what nature has to offer – in fact, he has created an on-site vegetable garden to supply the restaurant’s kitchens.
